Asian Chicken and Lettuce Wraps

What's Cookin'

I am so excited to blog about this recipe. First my kids loved it so much they had more then one helping. Second I can give my creativity credit because I changed the recipe to suit our families taste buds.

Yummy....sweet chicken with with an Asian flare.

Instead of a lettuce wrap we did and lettuce bowl. Recipe called for Bib or Boston lettuce and I had a ton of romaine in the fridge, so that is what we used.

I am sure you are wondering how I changed the recipe to make it so delicious. :) When I read the ingredients there were two ingredients that did not sound appealing to me. Thai or jalapeno chile which I did not have the motivation to search for in the grocery store. The other was fish sauce. I am the only one in the family that likes fish so I knew that wouldn't go over well.

I left out the two ingredients above that did not appeal to us. I researched other Asian Chicken Lettuce Wrap recipes and choose to add 2 tablespoons rice vinegar, 1/4 teaspoon toasted sesame oil, and 1 tablespoon Hoisin sauce. Everything else in the recipe was accurate and it turned out fabulous. Now I just have to remember to make it again.

HHMMM.....lets do the health benefits of romaine lettuce which is what I used.

Of course it gives you the familiar protein, iron, Omega 3's, calcium, and iron. The interesting thing about a head of romaine lettuce is that it holds more vitamin C then an orange. Also, a whole lettuce head has 16% of your daily water needs. So yeah for romaine!
