Vegetable Lo Mein

What's Cookin'

Lots of yummy healthy food in this pasta dish with an Asian twist. It had the perfect amount of Asian spices and lots of yummy crisp vegetables. I always enjoy a bowl that is full of color. I believe it is one way to tell if your getting all the food groups.

Napa cabbage, bell peppers, scallions, garlic, and ginger. (I skipped out on the mushrooms. We are not huge fans at our house.)
  • Napa Cabbage is low in calories, has lots of fiber, folic acid, and has good levels of vitamin C.
  • Bell Peppers are also low in calories with lots of vitamin C and E. They also stay sweet and crunchy when cooked lightly.
  • Scallions click HERE for previous post.
  • Garlic is the worlds most powerful antioxidant which is where that strong smell comes from. It's also a powerful antibiotic. So eat your garlic and fight off those nasty colds.
  • Ginger has a boasting effect on the immune system. If your the person who drinks ginger ale when the flu comes on...keep doing it. It also can be a great pain reliever due to its anti-inflammatory properties
Although I haven't mentioned it above, all of these foods and others in previous posts help to reduce the risk of cancer or even fight it. I strongly suggest we eat more vegetables every day. If not only to loose weight or feel good but prevent sickness and disease. See the left side of my blog for juicing recipes. It is a quick way to get lots of fruit and veggies in your system with each meal.
